Pulled Pork Stuffed Twice Baked Potato
Creamy, cheesy, and loaded with smoky pulled pork—these twice baked potatoes are an easy comfort-food win. Finished with a drizzle of Running Code BBQ Sauce, they make a quick weeknight meal or a crowd-pleasing side at any cookout.
Ingredients:
- 4 baking potatoes
- Butter, to taste
- ½ cup sour cream
- Pulled pork (amount as desired)
- Cheese of choice (cheddar, Colby-jack, or pepper jack)
- Diced onion
- Milk (as needed)
- Running Code BBQ Sauce
Instructions:
- Bake the Potatoes: Bake the potatoes until fork tender. Let them cool just enough to handle.
- Scoop the Potatoes: Cut the potatoes lengthwise and scoop out the insides, leaving about a ¼-inch layer around the shell.
- Mash the Filling: In a mixing bowl, mash the potato with butter, sour cream, diced onion, and a splash of milk until you reach your desired consistency.
- Add the Good Stuff: Stir in the pulled pork and cheese. For a little extra kick, pepper jack works great.
- Stuff & Heat: Stuff the potato shells with the mixture and place them on a baking sheet or on the smoker.
- Bake or Smoke: Cook at 350°F until the cheese is melted and the potatoes are hot throughout.
- Finish Strong: Drizzle generously with Running Code BBQ Sauce before serving.
