Smoked Stuffed Meatloaf with Running Code BBQ Sauce

Ingredients:

  • 1 lb ground beef
  • 1 lb ground pork
  • ½ cup bread crumbs
  • 1 egg
  • ¾ cup Running Code BBQ Sauce (plus more for finishing)

Instructions:

  1. Prepare the Base: Line a baking sheet with plastic wrap. In a large bowl, mix the ground beef, ground pork, bread crumbs, egg, and ¾ cup of Running Code BBQ Sauce until just combined. Spread the meat mixture evenly into the prepared pan.
  2. Layer the Good Stuff: Add your favorite fillings—leftover pulled pork, shredded Colby-Jack and Pepper Jack cheeses, and sautéed onions. Drizzle generously with more Running Code BBQ Sauce.
  3. Roll and Chill: Roll up the meatloaf jellyroll-style, sealing the ends. Wrap tightly in plastic wrap and refrigerate for about an hour.
  4. Season and Smoke: Unwrap, season with your favorite rub, and smoke at 250°F for about 2½ hours, or until the internal temperature reaches 165°F.
